By that I mean, my old bread machine had a jam setting. If I just wanted to make some jam with no intentions of bottling, how would I go about it? I certainly wouldn't want a big batch. Is there a way to make it in a sauce pan then store it for a while in the fridge, until it's all gone, like in a couple of days?

Yes. Get a box of pectin at the store and they have all the directions right in there. Just when you put in into the jars, forget the processing, let them cool down and stick them in the fridge. The tops may still seal, but don't count on that being reliable. We're eating tons of golden Plum Jam right now.
