Some Food Storage Recipes

I don't remember who passed these recipes on to me--maybe Mountain Man. I've tweaked a couple of them.

Dehydrator Food Recipes

Vegetable Soup
2 c dried beef, diced 1 c dried tomatoes
6 c water salt
? c diced dried carrots pepper
? c diced dried onions 2 Tbs. Chopped, dried parsley
? c dried chopped celery ? tsp sage
And crushed celery leaves ? cup pearl barley
? c dried peas
Put meat and vegetables in soup pot, cover with cold water, bring to almost a boil, reduce heat below simmer for four to six hours until vegetables are tender. One hour before soup is done add 1 c dried diced potatoes. Season to taste.

Scalloped Potatoes
4 c dried, slices or grated potatoes 1 c milk
2 c boiling water ? tsp salt
1? c grated cheddar or 1 tsp butter
Mozzerella cheese
Place half the potatoes in well-buttered 8x10 baking dish. Top with layer of cheese. Cover with remaining potatoes. Add seasonings to milk and pour over layered potato and cheese combination. Dot with butter and top with remaining cheese. Bake at 350* until tender.

Creamy Corn
Soak corn in sufficient milk to cover. Simmer about ? hr or until tender. Stir in enough flour to thicken slightly. Season to taste with salt, butter, pepper and seasoned salt.

Zucchini Chippers
Before drying, sprinkle zucchini slices lightly with sesame seeds and garlic salt. Serve as a nutritious slack or dip in seasoned yogurt dip.

Salad Spikers
Dehydrate the following vegetables:
? c onions ? c tomatoes
? c carrots ? c green pepper
When they are dry and crunchy, chop into tiny pieces and add:
? c roasted sunflower seeds
? c soy nuts
Mix thoroughly and sprinkle about 1 tsp on salads. Add your favorite dressing and toss. Store any unused portion in refrigerator to preserve crispness.

Quick Energy Snacks
4 c rolled oats 1 c chopped dates or apricots
1 c brown sugar ? c raisins
1 c dry roasted nuts 1? c coconut flakes
Mix all ingredients together thoroughly. Spread onto tray. Dry until crisp. Seal in individual sandwich bags for munching on hikes and camping trips.

Homemade Granola
5 c rolled oats ? c brown sugar, firmly packed
? c wheat germ ? c honey
? c dried apple, chopped ? c sesame seeds
1 c raisins 1 tsp vanilla
? c chopped dates 1 tsp cinnamon
1 c chopped pecans or almonds
Mix all ingredients together until evenly distributed. Dry with paper towel. Spread out on fine mesh tray of dehydrator. Dry until crispy, then store in an air-tight container or individual sandwich bags.

Sliced Peach Pie
Soak 1? c dried peaches in the refrigerator overnight, then stew until soft (about 45 minutes). Chop peaches. Add a mixture of 2 Tbs. Flour, 1/2 c sugar or brown sugar, 1 tsp allspice, 1 tsp cinnamon and 4 Tbs. Melted butter, 2 Tbs. Water, 1/8 tsp. salt.
Add mixture to peaches and stir lightly. Pour into unbaked pie crust, cover with top crust, bake 35-45 minutes until a golden brown in 350* oven.

Apple Pie
2 c dried apples 1 Tbs. Butter
1 c sugar, brown or white 1 tsp cinnamon
? tsp salt 2 Tbs. Flour 1 Tbs. Butter
1 recipe plain pastry
Reconstitute apples by adding just enough water to cover the apples. More water can be added if necessary. Soak for about four hours.* Over-soaking will produce a loss of flavor.
Sift dry ingredients together and mix with the dehydrated apples. Line pie pan with pastry, fill with apple mixture, dot with butter and cover with top crust. Bake in a very hot oven (450*) 15 minutes; reduce heat to moderate (350*) and bake 45 minutes longer.
*You can reconstitute in much less time by adding the water and simmering for a few minutes on the stovetop.
