not only that but stew meat becomes extra tender, and can be used for stew, bbq beef, enchiladas, ....
I have found its better to can ingredients vrs finished products for the most part. it give greater versatility when you are ready to use it.
for example, canned tomatoes could be spaghetti sauce or salsa, instead of canning spaghetti sauce..
also if you dont have a canner yet, check out All American, they don't have gaskets that need replaced and they use a weighted gauge. far better in a ITEOTWAWKI situation.
