    Default Barley

    does anyone have any good recipes for using barley? I have a bunch of barley in our food storage, and I would like to start rotating it. I made this really wonderful barley mushroom risotto last night, but it took almost 12 cups of broth for 1 1/2 cups barley, and I stood at that stove for nearly two hours stirring. (truthfully it probably could have absorbed more liquid.. I was just darn tired!) I was looking for something a little less time consuming? LOL

    I just toss in a handful into my soup, add a Tbsp or so when I can soup or Barley Mushroom Soup.

    We always toss barley in soup, it is a great way to thicken it and add extra goodness.

    In the cooler months we cut up our veggies and meat the Sat. night and Sunday morning before we leave for Church we toss it all in the crockpot and by the time we get back from Church, it is ready for eating.
    As for me and my family, we choose liberty.
