I had heard somewhere that you can dry greens for storage. I picked a couple of young poke weeds, and set them in a pie pan in my gas oven for a couple of days until they were completely dry. I simmered them a few minutes in a bit of water tonight, and they re-constituted beautifully, in color, texture and flavor. Going to test my spinach and swiss chard tomorrow, and will then begin to dry the whole long row of spinach, and chard as it comes along.

I LOVE the idea that I can store my greens in plastic covered pails instead of using freezer space or taking the time and bother to can them. By the way, my husband is working on my solar dehydrator! phylm

Did you have to blanch them first?

I just washed them, no blanching. Had to take my husband to the ER in the middle of the night, so haven't tried the other greens today. Will report when I do. phylm

I have tossed them into the dryer and they were great...not clothes dryer, dehyderator. I added them to soups, stews, whatever needed some greens.
